Peychaud's Bitters is a bitter tincture produced by the Sazerac company, based on gentian. Peychaud's is comparable to Angostura bitters, but is lighter in color, sweeter in taste, and has a floral aroma. The exact recipe for the bitters is kept in the strictest secrecy.
It is believed that the creator of this tincture was a Creole pharmacist from the French colony of Saint-Domingue (now Haiti), Antoine Amedie Peychaud. In 1795, he moved to New Orleans, Louisiana. Around 1830, his efforts brought Peychaud's Bitters to light.
Peychaud's Bitters is used as an addition to various cocktails.
