The drink was 'invented' in Venice between 1934 and 1948 by Giuseppe Cipriani, the owner of the cult 'Harry's Bar', and named after the Quattrocento painter Giovanni Bellini, who was able to achieve unique rosy shades of white (depicted by him saints and angels' clothing) on his canvases. The color of the resulting cocktail reminded Cipriani of this color.
Initially, the cocktail was offered as a seasonal one at 'Harry's Bar', Ernest Hemingway's favorite Venetian refuge, Sinclair Lewis, Orson Welles, Humphrey Bogart and other representatives of the artistic bohemia. Later, it also became popular in the bar owned by Cipriani in New York. After one entrepreneurial Frenchman set up an industrial production of peach puree - the basis of 'Bellini' - the drink became year-round.
