Tabasco sauce is a brand name of hot sauces made from the flesh of ripe Cayenne peppers (Tabasco pepper), vinegar, and salt. The sauce is aged for three years in white Limousin oak barrels. It has a sour, spicy aroma and is popular worldwide.
When the peppers ripen and turn red, they are made into puree with a special salt, then this mixture is poured into white oak barrels and left to ferment for three years. After that, the pepper puree is mixed with vinegar, then filtered and bottled.
