It's considered that the cocktail was invented by an American engineer who was in Cuba during the war with the Spaniards and named it after Daiquiri beach near Santiago. But the one that really gained international popularity was created by Constantino Rubalcaba Vert in one of the most famous bars in the world, 'El Floridita La Habana'. This bar, the 'cradle of Daiquiri', was opened in 1817 and became famous thanks to writer Ernest Hemingway, who used to visit regularly. Especially for Papa Hema, suffering from diabetes, the cocktail was made without sugar, with lime juice, grapefruit and Maraschino liqueur - (Hemingway Special) and with a double portion of rum - (Papá Doble). This cocktail is a simple rum sour, but it's the name 'Daiquiri' that has stuck (unlike Gin sour and other sours that haven't gotten their own names).
Daiquiri was the favorite drink of John Kennedy and Ernest Hemingway. Thomas Hudson, the main character of Hemingway's novel 'Islands in the stream', confessed: 'My Latin is nowhere, just like my Greek, and my English, and my head, and my heart. I can only speak frozen Daiquiri right now'.
