Pour all ingredients except soda into a mixing glass (you only need the egg white and a couple of drops of vanilla extract). Stir thoroughly for two minutes. Add ice. Stir vigorously for another minute. Strain into a glass. Top up with soda water.
Henry Ramos created the classic Ramos Gin Fizz cocktail in his New Orleans bar in 1888, originally called the New Orlean Fizz. The cocktail was very popular until Prohibition, but it took a long time to prepare. The Ramos brothers even hired dozens of 'shaker boys', such was the cocktail's demand.
